I am a cell biologist by training working in pharma research and play the organ for distraction. Since the "real" organ in our parish is deteriorating, I started to set up a HW console this year. I added magnets to a cheap M-audio keyboard to get a quite realistic touch. Meanwhile I replaced the M audios with UHTs - what a different experience.
Its amazing what you can achieve, however, a real organ is a real organ.
