From L'organiste Liturgiste (Book 1, opus 65) by Alexandre Guilmant these are two pieces and an Amen on the hymn 'Deus Tuorum Militum'.
The first piece is a chorale with the melody in the tenor part, played on the Cromorne 8' of the Positif.
The second piece is a gently flowing chorale played on the 16'/8' foundations of the Grand Orgue and the Recit.
The Amen is played on a forte registration (as indicated in my edition).
This repertoire really sounds at home on the Aristide sample set (not a big surprise, of course). I hope you'll like it too.
